Individual choco-strawberry mousse

Petits pots de mousse choco freizh
  • 500g Savéol strawberries
  • 2 sprigs of fresh mint
  • 180g white cooking chocolate
  • 2 eggs
  • 10cl full-fat single cream

Melt the chocolate in small pieces in a bain-marie. Crack the eggs and separate the whites from the yolks. Off the heat, pour the single cream onto the chocolate, add the yolks and mix.Whip the egg whites until stiff and fold them into the mixture gently. Place the mix in the fridge for at least 1 hour.Rinse, hull and ... ... dice the strawberries.Prepare the ramekins by filling them halfway with the diced strawberries and half with the mousse. Garnish with a few pieces of strawberries and a few mint leaves.


Tip: Scatter some shortbread-type crumbs on top in order to blend creamy and crisp textures.
